600 g whole roast beef
Extra-virgin olive oil
Sea salt
Black pepper
2 large beef tomatoes
4 slices of Italian wood-fired oven bread
50 g of Pecorino cheese shavings
A little garlic, finely chopped
1 red onion, cut in rings
A little rocket salad
Aged balsamic vinegar
Marinate the meat on all sides with the olive oil, and season with salt and pepper.
Heat a grill pan until very hot, and sear the meat on each side for approximately two minutes. Allow the meat to cook in a fan assisted oven at 120° for approximately 15 minutes, before leaving the meat to rest on a grate for approximately 5 to 7 minutes with the oven turned off and the door open. Wash the tomatoes and cut into thin slices.
Fry the wood-fired oven bread with a little olive oil and young garlic until golden brown, before placing on a plate. Place the tomato slices on top and season with a little salt.
Cut the meat into thin slices and place on top of the tomatoes. Finally, cover with the Pecorino cheese, olive oil, aged balsamic vinegar, rocket salad and onion, and serve immediately.
